Weekend Wrap-Up #1

I hope everyone had a great weekend! Doesn’t it always go by way too fast? Ever since I started working from home, the weekend flies by in an instant. But hey, I don’t have a commute 5 days a week so I suppose I can’t complain too much. Here’s a little weekend wrap-up for ya.


A nice night in. Finished working around 6pm, then just poured a glass of wine & got to cookin’. I made a one pan dinner consisting of chicken sausage, brussels sprouts (have I mentioned they are my new fav veggie?), and roasted tomatoes. It was delicious and so easy! Once I make it again, I’ll be sure to snap some pictures.

I got some episodes of Downton Abbey in before bed. I know I’m not a late night out person, but I certainly can stay up late for a good show. It seems as though I get older, I’m staying up later. Is this weird or no? Am I subconsciously preparing for sleepless nights when I have a baby?


Rise n’ shine! It was an early start for my sis, bro-in-law and myself. We drove to Maiden, NC to check out a house for sale for my parents. They are interested in moving to NC too, so I think they’ve started their search. It’s true what people say; people from NY move down South more often than not. haha.

   After the drive out, we grabbed lunch at Midtown Sundries in Denver. It was my first time there, and I was impressed! The boneless wings were great, and the casual atmosphere was right up my alley.

The rest of the day was pretty low-key. Some laundry, reading, working on the blog, etc.


It was a dreary day here in Charlotte. Clouds and rain for the whole day. Which if you’re anything like me, you’d say that’s a perfect day for being lazy and not getting up from the couch. But, I decided that I was going to rise above that, and make it a productive day. I did a quick food shop in the morning, threw in some (more) laundry, and re-organized my bathroom and fridge. And while doing all that, I made a sauce in my dutch oven that was simmering on low for hours. I made a big batch, that way I could have leftovers this week, and also put aside some in the freezer.

After dinner was done and dishes were put away (which is always the worst part in cooking), I OF COURSE watched Downton Abbey (I’m on the last season already!), had some Halo Top ice cream (which is a great way to get your sweet fix if you’re trying to watch your carb/sugar intake), and called it a night.

Now let’s get back into the swing of things!
